Eva is hardly the best anime ever. It's given that title because a large majority of anime viewers are teenagers whose little minds are blown the use of classical music as a soundtrack, and an ending that is highly confusing, so therefore it must be smart. A confusing jumbled ending doesn't make it smart. It makes it poorly constructed, and a failure as a series for not getting it's message out there. It was so much of a failure they tried to get it right with a special OVA...and guess what. They failed again. Bad storytelling does not a greatest anime EVAR make.
